Tuna and Capers

Ingredients

1 onion chopped
garlic chopped
olive oil
capers
ditalini style pasta
2 cans tuna
romano cheese

Cook pasta in water with salt added. Cook till al dente. Set aside. Cook onion in olive oil till opaque then add garlic. Slightly brown onion and garlic; add capers. Cook about 3 minutes till capers are somewhat soft but still whole. Add drained tuna until heated through. Toss into pasta and top with cheese.

Greek Beans

Ingredients

fresh green beans
brocolli hearts
garlic
butter
olive oil
oregeno
thyme
salt
pepper
basil
parsley


Prepare fresh green beans for blanching. Peel top layer of brocolli hearts off and cut stalk at a slant. Boil water and add salt, blanch beans & hearts. In saute pan, melt butter, olive oil. Add garlic, beans & hearts. Add spices to taste. Don't over cook, you want your beans tender with a slight crisp.

As with many of my dishes, there may not be measured ingredients. In this case, you will need as many beans and hearts to serve enough people as a side dish, and use spices, butter and olive oil accordingly.

Cheeseburger Bake

Ingredients
2# ground beef
1/2c. chopped onion
2 - 8oz cans tomato sauce
1/2c. ketchup
1/4t. pepper
10 slices of american cheese
2 cans refrigerator buscuits

Brown and season burger like usual with onion. Drain fat. Add tomato sauce, ketchup & pepper. Heat through. Take 9x13 cake pan, greased; and add half burger. Top with half cheese, then rest of burger. Arrange biscuits on top. Bake at 400 degrees for 20-25 minutes or until biscuits are golden brown. Do Not Cover while baking.

Kaszuba Toffee Bars

Ingredients
12 oz. chocolate chips
2 c. flour
1 c. oleo
1 c. brown sugar
1 egg
1/4 t. salt
1 t. vanilla

Cream oleo & sugar. Add egg and vanilla. Beat well. Add dry ingredients little at a time till smooth. Spread into 9x13 jelly roll pan or cookie sheet with sides. Bake 18 minutes or till shomewhat hard. Spread chips on top while hot until all is melted. Sprinkle with crushed nuts if desired.

Melanie's Breakfast Rolls

Ingredients
20 frozen rolls
1 stick butter or oleo
1/2 c. brown sugar
1 t. cinnamon
1 pkg non-instant vanilla or butterscotch pudding

Put rolls in greased bunt or 9x13 cake pan. Sprinkle pudding over top. Melt oleo and add brown sugar & cinnamon. Spoon mixture over top of pudding. Cover with waxed paper and set out overnight. Bake in 350 degree oven for 20-30 minutes. When done, immediately flip over pan onto cookie sheet.
